There is a new type of start-up business born out of the demand for local food. There is a gap between the small to mid-size farmer and the market. Companies like Provender out of Montreal and Wendy’s Mobile Market out of Lyndhurst, Ontario, are bridging the gap between farm and table. They pick up the fresh produce at the farm and deliver to restaurants and stores.
